  1. Prepare the cherries

    Wash and pit the cherries. You can use a cherry pitter or carefully cut around the pit with a knife.

    Place all ingredients into a large pot.


  3. Simmer the mixture

  • Fill jars properly

Leave 1/2 inch of headspace at the top of each pint jar to allow for expansion during processing.


  • Seal jars tightly

Place jars in a boiling water bath, ensuring they are covered by at least 1 inch of water. Process for 15 minutes if at sea level. (Remember to adjust the processing time for your elevation.) Don't start the timer until after the water has come to a rolling boil. After the processing time has elapsed, remove the lid, turn off the heat and allow the jars to cool for 5 minutes.

  • Cool jars undisturbed

Remove the jars from the water bath and let them cool on a heat resistant surface for 24 hours.


  • Check seals before storing

Press the center of each lid. If it does not flex up and down, the jar is sealed. Store sealed jars in a cool, dry, dark place.

If you prefer not to can, you can store the chutney in the refrigerator for up to 3 weeks or freeze it for up to 3 months.
