Preparing the raspberries


  1. Rinse the raspberries under cold water to clean them.

  3. Pour the berry mixture into a large saucepan. Bring this mixture to a boil over medium heat.

  1. After coming to a boil, carefully remove the saucepan from the heat.

  2. Pour the mixture through a fine-mesh strainer into another pot, using a spoon or spatula to press down on the raspberries and extract as much juice as possible.

  3. I like to use a silicone spatula to get as much of the pulp off the bottom of the strainer as possible.

  4. Return the juice and pulp to the saucepan and add the rest of the lemon juice and the sugar.

  5. Stir over medium heat until the mixture comes to 190 degrees F and keep it there for 5 minutes. (Don't let it boil or you will lose too much liquid.)

Canning the Concentrate

  1. Ladle the hot concentrate into pint jars, leaving 1/4 inch of headspace.

  3. Process the jars in a boiling water bath (electric or regular) for 15 minutes if at sea level. (Remember to adjust the processing time for your elevation.)

    Don't start the timer until after the water has come to a rolling boil. After the processing time has elapsed, remove the lid, turn off the heat and allow the jars to cool for 5 minutes.

  4. Remove the jars from the water bath and let them cool on a heat resistant surface for 24 hours.


A good seal will keep your concentrate fresh for months, allowing you to enjoy it many months later!


Storing Your Raspberry Lemonade Concentrate


After cooling, listen for the satisfying “pop” sound as the lids depress down and seal. Store your sealed jars in a cool, dry, dark area like a pantry or cellar. Properly canned, this concentrate can stay fresh for 3 years. After that, the nutritional value begins to decrease.

When you're ready to enjoy it, mix 1 pint of the concentrate with 1/2 a gallon (8 cups) of water.
