Ingredients

For the Pancakes:

For the Topping:

  • 1/4 cup butter

  • 2 pounds quartered strawberries

  • 1/4 teaspoon cinnamon

  • 1/4 cup sugar

Making the Batter

A woman in an apron holds a skillet with butter. Nearby are strawberries in a bowl, a jar of milk, and text: "1/2 cup Butter."

First, place 1/2 cup (1 stick of butter) in a 13 inch skillet. Place it in the oven at 425 degrees until the butter is melted.

Person in a kitchen wears a beige apron labeled "Mari", using a red blender on a counter. The blender contains white liquid with yellow.

While that is heating, blend together the eggs, milk, flour, sugar, and nutmeg.

Cooking the Pancakes

Batter is poured from a blender into a black cast iron pan on a speckled countertop. A person wearing an apron is partially visible.

When the butter is melted, add the batter to the center of the pan. You don't want to mix it together just pour it in with the butter accumulating at the edges.

Bake at 425 degrees for 15-20 minutes. It is done when it is fluffy and the edges are browned.

Cook until it is just warm but not soft and then set aside.

Finishing

A person pours liquid over sliced strawberries in a large pancake in a skillet on a granite counter. A beige apron with "M" is partly visible.

When the puff pancake is done remove it from the oven and add the strawberries to the center.

Serve it immediately as the puffiness will reduce quickly and it is just so impressive when it is fresh.

For those with a sweet tooth, drizzle some maple syrup on top for extra flavor. A dollop of whip cream is another lovely addition to this meal.

Why Strawberry Puff Pancakes?

You might wonder why you should choose strawberry puff pancakes over regular pancakes. For one, they are visually appealing and taste fantastic. They are great for special occasions or simply adding joy to a weekend brunch. They also have a higher protein content and are lower on the glycemic index.

Adding fresh fruit to breakfast helps you get essential nutrients while enjoying a tasty dish. Pancakes are like a blank canvas, so feel free to swap out strawberries for other fruits like blueberries or raspberries. The options are endless.

Storing Leftovers

If you manage to have any leftovers (which is uncommon), store them in an airtight container in the refrigerator for up to 2 days. To reheat, just pop them in the microwave for about 30 seconds or heat them on a skillet for a few minutes.

Time to Shine

These strawberry puff pancakes are bound to become a breakfast favorite in your home. They blend the joy of cooking with the satisfaction of a delicious meal.
