Strawberry puree is a versatile ingredient that adds fresh, natural sweetness to smoothies, desserts, sauces, and drinks. Making your own frozen strawberry puree at home is simple, cost-effective, and lets you enjoy the vibrant flavor of strawberries year-round.


Choosing the Right Strawberries


The first step to great strawberry puree is selecting the right berries. Fresh, ripe strawberries deliver the best flavor and texture. Look for:


  • Bright red color without white or green patches

  • Firm but slightly soft to the touch

  • Sweet aroma indicating ripeness


If fresh strawberries are out of season, frozen strawberries can also work well. Just make sure they are unsweetened and free from added preservatives.

Before blending, wash the strawberries thoroughly under cold water to remove dirt and pesticides. Then, remove the green stems and any bruised or damaged parts.


If you want a smoother puree, you can also remove the seeds by passing the blended mixture through a fine mesh sieve, but this step is optional.


Blending Strawberries into Puree

Place the prepared 1 pound of strawberries in a blender or food processor.

Then add:


  • 1 teaspoon Lemon juice (brightens the flavor and preserves color)

  • 1/4 cup Sugar (enhances sweetness)


Blend on low-medium speed until your desired consistency.


Freezing the Strawberry Puree

To freeze the puree, portion it into ice cube trays or small airtight containers. Ice cube trays are especially convenient because you can thaw just the amount you need. Cover the trays with plastic wrap or lids to prevent freezer burn.


Once frozen solid (usually after 4-6 hours), transfer the cubes into a labeled freezer bag or container. This saves space and keeps the puree fresh for up to 6 months.
