Wash the papaya under running water to remove dirt or residues.
Peel the skin using a sharp knife or vegetable peeler.
Cut the papaya in half lengthwise and scoop out the black seeds with a spoon. The seeds are edible but bitter, so remove them unless you want to experiment.

Slice or cube the flesh into pieces about 1-inch in size. Smaller pieces freeze and thaw more evenly.
Optional: Treat with lemon juice to prevent browning. Toss the pieces lightly in fresh lemon juice if you want to keep the color bright.
