Creamy apricot fruit leather is a nutritious snack for my family. I enjoy having healthy, convenient options for snacking on the go. The most challenging part of this recipe is waiting for the dehydrator to finish. It truly comes together swiftly.

A bowl of fresh apricots being rinsed under running water in a kitchen sink. The fruits are vibrant orange with water droplets.

1. Wash the apricots and remove their pits with a paring knife.

  1. Blend 6 cups of apricot puree.

A person wearing a "Maria" apron stands in a kitchen with a blender full of orange mixture. A jar and kitchen items are on the counter.

3. Add 1 teaspoon of sugar and 1 cup (8 ounces) of vanilla or plain yogurt in a blender and blend until it is nice and smooth. (If you like a sweeter leather you can add up to 2 tablespoons of sugar to the mix.)

Orange liquid is being poured onto a green tray on a speckled countertop, suggesting a kitchen setting.

4. Prepare the dehydrator fruit leather trays by brushing them with coconut oil. Then, pour the mixture on the trays in an even layer.

5. Dehydrate at 130 degrees for 10-12 hours.

6. Once it has thoroughly dried, cut the leather into serving-size pieces and wrap it in plastic wrap.

I then store it in an air-tight container and use it in the next 3-6 months.
