Muffins particularly strawberry cream muffins are a fabulous addition to any morning meal. Our homemade bisquick mix makes it so much easier to make.
Combine 3 cups of the bisquick mix, 1 1/2 cup of cream, 3 tablespoons of sugar, 1 teaspoon of vanilla, 1/2 cup mashed strawberries, and 1 egg. This is a somewhat thick batter. If you wanted a thinner batter you could add more cream.
Grease muffin tins, sprinkle the bottom with sugar, and fill 3/4 of the way full with batter. Bake on medium heat. Remove from waffle maker when both sides are golden brown. Makes 24 muffins.
Serve warm or cold, with or without butter.
